Old wine Some young Bordeux (a red wine blend generally containing Cabernet Sauvignon, Merlot and up to 3 other "Bordeaux varietals") can be so acidic & tannic that one really needs to wait as many as 10 years or more before it softens enough to be palatable. The 2003 Chateau Lamourette Sauternes made from 90% semillon, 6% Muscadelle & 4% Sauvignon Blanc was quite pleasant. blend of 70% Merlot & 30% Cabernet Sauvignon, this wine has a deep rich ruby color with aroma's of black fruit, chocolate and coffee. or blog post as the case may be. Sweeter" & softer Merlots were what I initially preferred to the tannic & cloyingly dry Cabernets I had the opportunity to taste.
