    [Kosher] Quick Radish Pickle
    I peeled them and sliced them in half and quarter moons, and added maybe a bit more than a tablespoon of coarse kosher salt. So apparently you can pickle vegetables merely by adding salt and then waiting a little while as the water is drawn from the cells. This quick pickling method can take as little as 5 minutes if you are David Chang , or it can take longer, but my sense is that it's up to the pickler to decide how long the pickling will take.

    Very interesting to read that Kosher wine sales are growing in multiples. Kosher wine distributor Kedem UK is growing sales outside the Jewish community -- 400 Saintsbury's stores listed Kedem's Bartenra Moscato recently, with Costco listing its Rothchild's Chateau Clarke and a Malbec from Argentina - both wines 15 - 17 pounds. FYI, a wine must be produced by a practicing Jew to be certified kosher, and the production methods are the same as mainstream wines.

    This is a kosher restaurant owned by Uzbek Jews. I like to travel within New York City, to explore the far away neighborhoods, and the not so faraway. There are so many ridiculously good things to eat here, we really are very lucky. Just look at this bowl of Bun Rieu, the Vietnamese crab paste soup with vermicelli noodles that I recently ate in Sunset Park , Brooklyn. At Thanh Da, this soup is served with fried tofu, chunks of pork rib, tomatoes, and lots of mint. Pure savory satisfaction.

    Could this man who lives and vines in Santa Cruz become the world's first modern natural wine maker? He is certified organic, in a do nothing way. He picks when there's still acidity. He keeps the cap wet twice a day by bucketing over as well as punching. He doesn't use sulphur until after malo is finished--which he neither blocks or initiates. He is pulling back on oak but he does like the taste. But what he thinks is oak is another's stainless. He racks to bottle, done.

He also has one of the more Lilliputian crusher/destemmers I've seen, made from redwood, with metal spokes, it seemed to cry weaver's studio rather than winemaker's. Just to keep it all going on this otherworldly theme, the labeler looked like a torah scroll.

    This is a little bit like serving real pig in a blankets at a kosher bar mitzvah. The world is happy to wave the flag for natural wines lately. Stories about the stuff lurk everywhere. Festival, tasting, weeks and celebrations are like morels in the spring, but there is also a lot of misinformation. Wines being called natural that are not. Some of these mistakes are honest, some out of ignorance, some are from a pure marketing effort. The last of course, make my blood hotter than normal.

    Bring to a boil 3/4 cup of white vinegar and 1/2 cup water with 2 1/2 tablespoons kosher salt and 2 1/2 tablespoons sugar; 6 juniper berries, 6 black pepper corns, and 1 bay leaf. In March and April, and then again in November and December the fishmonger at my local farmer's market has herring. For years I stared at the tan and silvery fillets without buying. Then I got into pickling. Last year at this time I first tried my hand at pickled herring, and now I'm hooked.

    Often overlooked by Israeli wine lovers given its perception as the entry level series from the Golan Heights Winery, this wine is a very nice example of an Israeli Cab and Goldberg suggests pairing it with duck breast & braised short ribs (**note to those I'm eating holiday meals with**). ;) Two other wines I want to briefly mention are kosher wines NOT from Israel. I'm sorry for the delay in writing this post. I have gotten MANY requests for my Rosh Hashana suggestions.

    I prefer a more salty okra pickle, so I use about 1/3 cup of kosher salt and a bit less of sugar. Summer's not done yet, folks, and some of the best produce is peaking right now at the markets. Okra is one of my favorite vegetables in late August and all through September. At my favorite vegetable monger's stand, I seem to be one of the only people digging through the bins looking for choice specimens. It's me and a smattering of Caribbean and African ladies.

    While for the most part it is referred to as "kosher" wine I am plugging the idea of Israeli wine. WHAT A WEEK! And it was only 4 days long. Feels a bit more like an 8 day week. Don't get me wrong, I was busy running around selling wine and I had a blast. Oh yeah, there was also a bit of NFL FOOTBALL thrown into the busy mix.     Coarse kosher salt. I know - I just wrote that I might have to change direction, think about wrapping it up here at Brooklynguy, and now only a few days later I write the longest post in the history of blogging. Whaddayagonnado? I've been working on a pasta dish that's perfect for summer. When I do it well it marries savory and herbal flavors. It's light but it's also completely satisfying.     It was a kosher wedding, and as such required not just kosher wine, but kosher "MEVUSHAL" wine. Sadly these wines were not available at last night's wedding, or just about any kosher catered wedding I have attended. It seems there is a universal agreement between kosher caterers to carry the nastiest wine possible at these affairs. And these thin, weak, generic, cooked wines being served at kosher affairs are an embarrassment.

    [Kosher] Yarden Odem Chardonnay 2006 Organic Vineyard Israel
    I don't read Hebrew but I believe this wine is Kosher This Chardonnay is a tasty wine from the Golan Heights in Israel. It is the color of pale gold and has an aroma of flowers, with a hint of banana. Pear and citrus with a bit of oak permeate the palate and leave me with a buttery finish of vanilla ice cream and spiced apples.

    Jeff is the winemaker for Solorosa and as well as Covenant wines, a premium kosher Napa wine. The Covenant, which sells for close to $100/bottle, is a favorite wine for many (well to do) kosher consumers. A treat for kosher consumers who may not have too many opportunities to try some of the special wines coming from Napa Valley. My day began in LA with an early flight from LAX to SFO. I rented a car at SFO and made my way to wine country.

    My favorite part of this story is that.this wine is KOSHER! I witnessed first hand how people can try a kosher wine and enjoy it - when not realizing that it is a kosher wine. An interesting experiment would have been to give the same wine to people but first letting them know that the wine was kosher. I attended this event for the second year in a row at The Altman Building in NY city.

    (Picture of Aron Ritter - founder of KOSHER WINE SOCIETY ) I attended the "Kosher Wine Extravaganza" today in Manhattan sponsored by Gotham Wines, one of the largest retailers of kosher wine. This was the 5th year that this event was held and there seem to be more wines each year. Out of well over 100 wines I managed to taste 81 of them followed by some Cognac (which I was told I was not allowed to spit) to finish things off.

    I am not going to go into ALL kosher wines but I will discuss where my passion lay, Israeli wines. Imported by a NON-KOSHER wine importer, Recanati is the one kosher brand in their portfolio. Castel went from an uncertified Israeli winery to one with kosher certification during the 2002 harvest. As such, many (but not all) 2002's are kosher, as are all wines released since 2002. Happy kosher Passover wine shopping!

    [Kosher] Wine expert - what are the qualifications??
    I spoke with many people throughout the evening about topics ranging from Israeli wines in general, to more specific Israeli boutique wineries, as well as the idea that wine from Israel is (and should be) Israeli wine and not kosher wine - as is often the misconception. I attended a wine event this evening. It was a charitable event featuring Israeli wines - my passion as those of you who have been reading for a while know. I know one of the organizers and asked if he wanted my assistance.

    The kosher event had more wines, much more food, and took place at a time that was more conducive to drinking wine (in the evening rather than the afternoon). But given that i am now more interested in evaluating wines and hearing the stories behind the wines, this kosher event fell short. There were a tremendous amount of kosher wines, some of which cost about or more than $100 per bottle. Happy KOSHER wine drinking!

    Off to a big kosher wine & food event tonight. The following wine caught my attention for a few reasons. And none of them were taste (I haven't had the opportunity to try it), or the insane price for which it is being sold. The 2006 Winner's Tank Shiraz Langhorne Creek is being sold here for $11.97. There were two other online outlets selling it for $11.99, while others were selling it for $13, $14 & as much as $17 a bottle.

    The Kosher Wine Society hosted a tasting tonight with Israeli winemakers from the Castel & Binyamina wineries. The evening started with a 2004 Sauvignon Blanc from the Binyamina winery. Sauv Blanc, when not oaked, is generally a wine that should be consumed young. As such this wine was nice and pleasant but a little over the hill and mostly indistinct.

    I've stated on several occasions that I observe kosher dietary laws, but when it comes to wine, whose production MAY include problematic products (used for clarifying wines) I have looked the other way, figuring these problematic ingredients are removed from the wine before bottling. And who knows, this may become law - which would be GREAT for vegetarians, vegans, kosher consumers, etc. Bonny Doon, of Santa Cruz CA thinks so. I'm a fan of Bonny Doon wines and I LOVE this move!

    I touched upon some of the misconceptions regarding kosher wine there and will not get into it again here. In his blog, [link] (search for kosher for the exact thread) Dressner states "My view has always been that the expression good Kosher wine is an oxymoron." the very process of making Kosher wine excludes the possibility that it will be great wine. Israeli wines, kosher or not, are obviously of great import and significance to me.

    This is a very detailed and technical discussion, the kosher aspect of which I touched upon in a friends blog a few weeks ago regarding wines from Israel. For the record, wineries also use other products for "fining" which are problematic for both kosher observers as well as vegans. As someone who observes a KOSHER diet (albeit leniently), this is a question which I have researched and that has led to a tremendous dilemma - one I still grapple with.

    Here is our new favorite method: Fresh oregano in the mortar and pestle with a few cloves of garlic and some kosher salt. A few wines of interest from the past few weeks that don't get their own post: Burgundy 2003 Marechal Savigny Les Beaune Vieille Vignes , $ unknown (restaurant purchase). I have come to expect excellent wines from this producer, and I remember enjoying the '03s in general.

    [Kosher] Enjoying a Lip-Stinger
    There are a couple of serious cheese mongers in there as well as a kosher wine shop, a barber shop a tailor and a restaurant. I popped into a wine shop the other day in sort of a hurry. I had multiple bags of ingredients in hand from an amazing new find called the Essex Street Market. This place is amazing. It is an indoor market from a bygone era (1930's) when LaGuardia was mayor.
