    This wine is all Bouzy, a blend of 70% Pinot Noir and 30% Chardonnay, but it reminded me of a wine I tasted a few years ago by Moutard that is made with the obscure grapes of Champagne, things like Arbanne and Petit Meslier.     So it was that the 1997 Chardonnay that we tasted was made by Williams-Selyem but the 2007 was from Hirsch Vineyards. The 2007 Hirsch, although nobody’s going to confuse it with Chablis, was definitely leaner, with higher acidity and lower alcohol: voluptuousness was replaced by more restraint.

    Brooklyn Blind Tasting Panel #5 - 2007 Bourgogne Aligoté
    It needs to be picked later than Chardonnay. But most producers simply weren't devoting that kind of attention to Aligoté and it made more sense to pull out the vines and replant with either Chardonnay or Pinot. Honestly, who drinks Aligoté? It's so acidic and harsh and there isn't much of a reward. Old vines don't hurt either.

    A few years ago I spent a lot of money on two bottles of Chablis , money that I wish I could have back right now. Chablis is a difficult wine to get spendy with, assuming you want to drink Chablis that shows real Chablis character. I'm not sure that I would buy William Fèvre's wine again if I were paying $75 for Chablis.

    The soils for the white wines supposedly resemble some of the Grand Cru plots of Chablis, with blue marl and limestone. Le Grand Blanc is a blend of 30% Grenache Gris, 30% Chardonnay, 20% Roussanne, 10% Muscat, and 10% Rolle (aka Vermentino). August brings some serious goodness to our local farmer's market.     2006 Domaine Oudin Chablis Les Serres , $22, Jenny & François Selections. Christiane Oudin and her husband Jean-Claude took over her father's small 2 hectare estate in Chichée, very close to the town of Chablis, in 1988. There is also a basic Chablis which is not imported to New York, although it does go to other states.

    San Diego Trip Food and Wine
    Hafner Cabernet and Chardonnay are house wines at pop-in-law's. 2002 Domaine William Fevre 2002 Chablis Grand Cru Bougros , price unknown but probably about $45. I always enjoy visiting the in-laws in the San Diego area. My pop-in-law, through his work, is the recipient of many a lavish wine gift. Quite good with our steaks.

    It Was A Good Day To Be A WIne Geek
    Stag's Leap Cellars was rolling out their new chardonnay at BLT Fish; someone just canceled would I like to attend. They have a line of cabernet and chardonnay that truly reflect what the state has to offer. The wine was the Stag's Leap 2004 Arcadia chardonnay. It was very Chablis-like. I'm just a wine geek. Give it oak.
