    They are selected by Antonio Flores, the González Byass cellar master, as barrels of special quality and bottled at different points in their evolution toward Amontillado. Drinking them one after the other was, as advertised, a great lesson in the progression of biologically aged Fino Sherry. my stars. Then came the Palmas.

    The first event will be a wine blending seminar, where guests will receive an expert-guided tasting and lesson in blending the characteristic grape varieties of the region with pipettes to create their own special cuvée of Languedoc-Roussillon wine.     Dinner with the Wines of Savigny-lès-Beaune
    Drinking them next to each other was a great lesson in Savigny-lès-Beaune terroir. It had a lovely perfume and although it was drinking very well, it never fully unraveled and I imagine that it will do very well with 7-10 years of cellaring. Why Savigny-lès-Beaune? That's real money, but it's pretty cheap as far as Burgundy goes.

But this was a valuable lesson for me in the difference between tasting from a barrel, and tasting the same young wine from a bottle.     learned my lesson with 2005 Bordeaux. Flights are delayed. Market volatility remains high. All indicators point to a long and restless summer. And it's the wettest spring anyone can remember. Just last night we opened a Robert Sinskey 2005 Los Carneros Merlot ** that was nicely textured and tart. just can’t bring myself to do it. Never again.”

    2008 Monte Bello Futures Tasting
    Thus, every trip up Monte Bello Road is a lesson and an adventure. Difficult to compare to recent vintages (which have all included at least some cabernet franc or petit verdot) this is less flamboyant than the 2006 and 2007, and will benefit from extended cellaring. As is obvious, I have a certain fondness for Ridge Vineyards.

    Domaine Pierre Morey, Meursault
    Perhaps the finest and most memorable lesson that I received in Burgundy terroir came at the hands of Pierre Morey. We began in the cellars of Morey-Blanc, tasting through the lineup of reds. We then moved on to Morey-Blanc's whites, and then drove several blocks to Domaine Pierre Morey's cellars to taste his whites.

    Dressner Portfolio Tasting Notes
    In honor of their 20th anniversary, the Dressner folk dug into the cellar and set out a load of wines from their inaugural vintage. Pacalet has a cellar in Beaune proper and buys grapes from various growers, often tending the plots himself. There was simply no way to taste everything, even if this were the only tasting of the day.

    Corked Wine Update: I Can Do It!
    BrooklynLady requested a Sancerre with this dinner and it happens that we had only one in the cellar, the 2005 Domaine Pascal Cotat Sancerre Les Monts Damnés , $42, imported by Michael Skurnik Wines. A $42 lesson in smelling wine. And it would save me from cellaring a bottle of wine that I didn't like. Finally, I did it!

    Mistakes from storing wine upright to keeping it in the kitchen or some other hot place (I did that once - and learned a lesson) can really damage that expensive bottle you have been saving for a special occasion. I received an email today from a new friend asking whether or not I thought he should purchase a wine fridge. Kidding! Until then.

    Young wine VS. Old wine
    Like many a Chatanuef du Pape, the best of Cote Rotie are very pricey yet amazingly have cult followings and need many years of cellaring before it is truly approachable and at its best. Wines 3-6 years following their vintage have often had time in barrel, more time in the winery (in bottle) and a few years of cellaring.

    Smoking My First Brisket
    Most Important Lesson Learned - lean brisket is for braising (cooking in liquid). of this hiding in the cellar. No, this is not some sort of euphemism. I've used my Weber grill to smoke pork ribs plenty of times, but never a beef brisket. out of 10 times at the BBQ joint I order ribs, so at home I cook ribs. know.who really cares.

    What Would You Pour?
    went with the 2002 Domaine des Baumaurd Coteaux du Layon Clos du Sainte Catherine , $28 on release, imported by Ex Cellars Wine Agency. But very soon the nerves went away, as it was a gorgeous evening and within 5 minutes Alice was giving BrooklynLady and me dancing lessons. The other night Alice Feiring stopped by for a glass of wine.

It soon became clear why. I'm moving back to Moscow.
