So, here goes. | | | | | | | DR. VINO MARCH 26, 2009 Randall Grahm - the way back is the way forward - part II But his biggest experiment is with his 2008 wine called Le Cigare Volant, a blend of Grenache, Mourvedre and Syrah. But if one makes the right adjustments in winemaking (lower levels of SO2, longer aging in cellar, holding the wine in bottle longer before release) the benefits far outweigh the inconvenience. ALICE FEIRING | WEDNESDAY, NOVEMBER 28, 2007 Alice Feiring - In Vino Veritas No big deal in his opinion. Sometimes that is the result of poor practice in the field, sometimes its just an effort to grow the wrong grapes in the wrong place, or a lousy growing season, or stupid mistakes in the cellar. How do you make a screwcap-sealed wine taste and smell like rotting cabbage or burning rubber- put it in the cellar for a few years. German Riesling. And I really don’t understand why. The Loire. BROOKLYN GUY LOVES WINE | MONDAY, JANUARY 28, 2008 By the Glass - Restaurant and Wine Bar Edition So I'm going to be one of those unfashionable people who will order a Santa Maddalena (the name of the DOC), and you're going to have to just deal with it. Mostly Carignan, with some Grenache and Syrah thrown in, the 2005 Domaine des 2 Anes Corbieres Fontanilles was smooth and supple, ripe and complex. Turned out to be a real winner. MORE >>
