    Paul Draper’s forty years and the making of Ridge Monte Bello
    We tasted fifteen vintages of Monte Bello over the course of one day and had no clunkers. The younger vintages are all tightly wound and will reward with more than a decade of cellaring; the world’s best cabernet assumes a delicacy and refinement that make it very much worth the wait.     Of course the Volnay Taillepieds was very good, and so was Pommard Epenots, but those are much more expensive, and they weren't as easy to understand at this tasting. would eagerly buy this wine, and I'm sure it would cellar well but I bet I would drink mine rather quickly, fall coming on and all. Fall is tasting season in New York.

    beautifully mature and rewarding nose, the primary fruit long gone, and it got deeper and deeper over the course of the three hours it was open. makes me feel so good about the other Bandol sleeping in the cellar. 1994 Domaine Tempier Bandol Rouge , Kermit Lynch Imports, current vintage is 2006 and price is about $50.

    But a film of beneficial yeast forms on the surface to moderate the oxygen exchange and prevent it from heading on a crash course to becoming vinegar.     Corked Wine - Can you Spot it?
    If you have 100 bottles in your cellar, about 7 of them are corked. And furthermore, a person drinking corked wine can become sensitized to TCA over the course of the bottle, the way we become sensitized to most objectionable odors if we continue to smell them. Do you know what corked wine smells like? was not impressed with the wine.
