Tasting the hand and the land at Hirsch Vineyards
So it was that the 1997 Chardonnay that we tasted was made by Williams-Selyem but the 2007 was from Hirsch Vineyards. The 2007 Hirsch, although nobody’s going to confuse it with Chablis, was definitely leaner, with higher acidity and lower alcohol: voluptuousness was replaced by more restraint.

Anything But Chardonnay
Yes, there is an “Anything But Chardonnay club, dubbed “ABC , that from what I gather is anti anything Chardonnay. While I am not a club member, I have become mostly disenfranchised with Chardonnay. Or at least Chardonnay NOT from Burgundy.

Brooklyn Blind Tasting Panel #5 - 2007 Bourgogne Aligoté
It needs to be picked later than Chardonnay. But most producers simply weren't devoting that kind of attention to Aligoté and it made more sense to pull out the vines and replant with either Chardonnay or Pinot. Honestly, who drinks Aligoté? It's so acidic and harsh and there isn't much of a reward. Old vines don't hurt either.

Chablis Night
We had a bunch of people over for dinner this weekend for Chablis night. Everyone brought along a bottle of Chablis, I made dinner, and we enjoyed eating, drinking, and hanging out. In part, this was inspired by this Chablis post and the reaction to it by Kristin, Henriot's marketing director. But close. Lovely wine.

Burgundy continued; Chablis - William Fevre
My wine club’s Burgundy theme continued this past week, summer style, with the white wines of Chablis. “Chablis is the northernmost wine district of the Burgundy region in France. The wines of Chablis are (generally) made from 100% Chardonnay. Tags: wine tasting Burgundy Chablis William Fevre

WBW #36 - Naked Chardonnay
So this month's theme is Naked Chardonnay , or un-oaked Chardonnay. From the late '80s through the late '90s ( all dates are approximate , and cannot be confirmed ) Chardonnay was generic swill that the masses got when ordering white wine. Just give me a Chardonnay. So why naked or un-oaked Chardonnay? Many more.

2006 Domaine Oudin Chablis Les Serres , $22, Jenny & François Selections. Christiane Oudin and her husband Jean-Claude took over her father's small 2 hectare estate in Chichée, very close to the town of Chablis, in 1988. There is also a basic Chablis which is not imported to New York, although it does go to other states.

How to Train Yourself to Memorize Varietal Characteristics
And since Chardonnay is such a popular grape, and Burgundy, France, such a respected region, you decide to go in this direction. Yet as your eyes scan the enormous wine list, you see the various regions: Chablis, Meursault, and Puligny-Montrachet (and dozens of others). 2007 Jean Collet Chablis Vielles Vignes. Day 1 Chablis: 10th Edition Les Grands Jours De Bourgogne
Wine friends, I’ve been obsessed with Chardonnay and Pinot Noir since my visit to Burgundy to take part in the Les Grand Jours De Bourgogne – a very exciting week in the lives of journalists and trade professionals, and of course the winemakers throughout Burgundy. Maison des Vins de Chablis - in the sun! chablis room.

Tidal Pool
A few years ago I spent a lot of money on two bottles of Chablis , money that I wish I could have back right now. Chablis is a difficult wine to get spendy with, assuming you want to drink Chablis that shows real Chablis character. I'm not sure that I would buy William Fèvre's wine again if I were paying $75 for Chablis.

Chardonnay Series: An Intermezzo with Ted Lemon
His own technique was informed by Burgundy (having made wine at Guy Roulot's in Meursault) but there is no doubt that he is making wine in California and that is exactly the land he is trying to express through his bottles, and one of those grapes that he is giving voice to is Chardonnay. But the most demanding one is Chardonnay.
