I've basically accepted the fact that the bulk of my 05 Burgundy will be from the Cote de Beaune. refuse to sit this out though, this 05 Burgundy craze. Honestly, if you see this wine and you're interested in dipping a toe into the 05 Burgundy pool, you should just buy a few bottles. -

Auxey-Duresses is a village in the Cote de Beaune, a neighbor of Meursault, Monthelie, and Saint Aubin. And Lafouge is one of my favorites. -

This dish appeared on almost every menu in Burgundy. -

They also own the popular sushi place just outside Beaune called Sushi Kai. Amazing! -

The Hospices de Beaune ( pictured below ) has served the poor and sick in Burgundy for over 500 years now. Alliteration, anyone? -
