Today was a tasting of wines from the Cote Chalonnaise at the Tonnellerie de Mercurey. There are four key areas in the Cote Chalonnais. Most producers use goblet-pruning (not Guyot) to restrict the yields to 50-55 hl/ha.

But Channing Daughters seems to me they're still trying to figure out an angle on what will work from the East End. -

Wines made from Aligot é should be crisp and lean and fresh. can't imagine that the wine was supposed to be aged - it's Aligot é for goodness sake. But many people only write about the wines they like. He really should do that from time to time. -

Deetrane reminded us that Aligote is the wine traditionally used to make a Kir (an aperitif using white wine and a touch of creme de cassis). think I need to try more Champagne. -
