By contrast, the acidity is higher in the 2008 with sharper, more angular flavors of juicier, firmer red apples dipped in melted butter, and a finish that is long-lasting yet also seems to speak of the terroir. Basically, I found that this dish would pair well with just about any red wine and even a few white wines, but they all seemed to agree on Zinfandel, Syrah or Malbec. Lohr 2008 Merlot from Paso Robles: This is an easy drinking style of wine that would pair perfectly with grilled salmon or pork, with very cleanly defined black fruit and bright elements of spearmint.
