Most of it was replanted in 2003 and none of the grapes have been used in Salon vintages since then. They make one wine and one wine only, a vintage Brut Blanc de Blancs made entirely of Le Mesnil Chardonnay. My final visit of the Champagne trip was also one of the grandest, a visit to Champagne Salon. Calm, cool, collected.

In 2003, he made 3 different vins jaunes, all of which had a similarly oxidative nose, naturally, but all of which had different textures. Tissot also makes some lovely examples of Chardonnay. An academically interesting wine, but I preferred the chardonnays. Stephane Tissot from the Jura outside Les Caves Augé in Paris.

The Lassaigne estate is located in Montgueux, a large chalky hill whose vineyards produce what many consider to be the finest Chardonnay grapes in the Aube. This place, known as the Montrachet of Champagne, is an island of Chardonnay in a sea of Pinot Noir. Some would call them "hipster" wines, and perhaps they're right.

The name Petraea refers to the type of oak that the barrels used for this wine are made from, and the final blend contains about 60 percent pinot noir, with the remainder equally divided between chardonnay and meunier. And so I decided not to be frightened by MMIII, even though it features grapes from the roasting-hot 2003 vintage.
