    If you want to try it, Astor Wines has it on the shelves right now, and I hear that a few other shops are considering carrying it - in a few weeks try Uva or Slope Cellars in Brooklyn. My favorite on this night was the 2002 Brut Nature with its beautiful red fruit that really lasts in the nostrils, its vibrancy and clarity.

    One of the few remaining traditionalists, Lopez de Heredia is known for outrageously long bottle aging in their legendary cellars prior to releasing the wine.     One factor is that the wines are quite expensive, almost calling out for cellaring; bright, fresh acidity can be found much less money with Bourgogne blanc (or Chablis), for example.     The fourth vintage of Polish Hill, it was bottled under cork (they switched to screwcap around 2000) and had mid-shoulder fill (if the bottle had shoulders, that is) and came directly from the cellar of Jeffrey Grosset (pictured right), one of only a few bottles remaining. At the outset, it was a single vineyard wine of tiny production.

    I'd take a half case for the cellar and re-visit in 5 years. 2002 Domaine Leflaive Puligny-Montrachet 1er Cru Clavoillon - Bruce opened this wine alongside the Leroy, and it was more open and ready to drink.     In any event, after that exchange, I tried to specify for myself what I really thought about Girard, so I pulled some more of their recent wines from the cellar. As previously reported, the 2002 Girard Caberent Franc Napa Valley displays bright and luscious strawberry notes on opening. That was the end of the beginning of Girard.

    Farm Fresh Pork Cutlets and Beaujolais Redux
    was about to open my last 2002 Domaine du Closel Savennières because I love that wine and I think it goes with basically any food. The palate still has some grip - this wine will most definitely improve with 3-5 in the cellar, but it is smooth and approachable now, and entirely delicious with ripe fruit and snappy acidity.

    Domaine de la Guyonnière Gevrey-Chambertin
    The word that comes to mind as you sip Antonin Guyon's 2002 Gevrey-Chambertin ** is searing. The 2002 Gevrey-Chambertin ** has evolved into a puckering villages level Burgundy, with piquant cherry notes and a texture like sharp stones. This wine did not always require food to balance out; it was gorgeous by itself after release.

    It's also an egalitarian system - the host who feels flush can select 2002 Vosne-Roman é e 1er Cru wines as the theme. The exceptions for me were the Pinon wines - the Brut was fine but the 2002 Vouvray Tradition was just no good. Although I am not a fan of the 2005, my commitment to cellaring my '02s and '04s is renewed.

    In honor of their 20th anniversary, the Dressner folk dug into the cellar and set out a load of wines from their inaugural vintage. Pacalet has a cellar in Beaune proper and buys grapes from various growers, often tending the plots himself.     Friday Night Bubbles
    I've not had the chance to drink either of these wines at home, but I do have a bottle of the 2002 Vieille Vignes sleeping in the cellar. NV Larmandier-Bernier Champagne Brut Premier Cru Blanc de Blancs , $37, Louis/Dressner Imports. There is a fragrant chalky finish that really lingers, the acidity tingling the cheeks.

    2002 Dom Serene "Yamhill Cuvee" Willamette Valley
    Amazingly fresh. Tasted blind, I fingered this for a Central California pinot noir - Sea Smoke or Ojai - something from the Santa Rita Hills. I've never had a Willamette Valley wine that was so fresh or lively, and this at six years of age. sat there holding the cork in my hands wondering how this had stayed so young.

    Dinner with Peter Liem and Friends
    We began with the 2002 Champagne Raymond Boulard Extra Brut Les Rachais. The nose is so very delicate with lovely floral and mineral aromas, and beyond that a tightly coiled core of energy that demands many a quiet year in the cellar before it will reveal its true nature. The aromas and flavors really spread out and fill the nostrils.

They make many wines, some for drinking young, some for cellaring, like this one from the great Perrieres vineyard in Bourgueil. You will see that the structure will allow for cellaring though.     New Montevertine Releases
    My first taste of Montevertine wine was the 2002 Pian del Ciampolo and I really liked it, light and graceful but intense, like a good Pinot. This was just outstanding, and I have a few bottles sleeping in the cellar. The 2003 Pian del Ciampolo was also quite nice, but it didn't hook me like the 2002. Baking spices? What a nose!

But almost 3 hours later (thank you Cellar Tracker reviewers), by the time we sat down to our dinner, the nasty smells had completely blown off.
