The 2008 Alice and Olivier de Moor Chablis Rosette , $38, Louis/Dressner Selections is the first Chablis I've had from the 2008 vintage. From 2002 the Domaine has practiced 100% organic and now biodynamic farming. In the cellar, Sylvain selects red wine from several barrels for a tasting of the 2010 and 2009 and 2008 vintage, including the 06 Foret St. The grapes coem from old vine Chardonnay in a section of the Clos de l'Arlot and whole cluster pressed. Then we drank the 2008 Domaine Gauby Vin de Pays des Côtes Catalanes Les Calcinaires , $27, imported by Weygandt Metzler. It's a white wine from somewhere in the Roussillon; 50% Muscat, 30% Chardonnay, and 20% Macabeu, for you Macabeu fans and I know you're out there. Two friends came over for dinner the other night.
