    Always elegant hosts, the Cathiards ended the tasting with a round of Louis Roederer Brut Premier champagne, a tour of the cellar (Daniel takes great pleasure in opening it via remote control), and dinner.     Grass fed sirloin steak cooked this way , salsa verde, and raw kale salad in olive oil and a dab of fish sauce. -- Oma , a raw cow's milk washed rind cheese made by descendants of the original Von Trapp family, and aged in the Jasper Hills cellars. My first time with the '99, and it seriously outclasses the delicious 2000, in my opinion.

    He took the estate in a new direction, eventually going entirely organic as of 2000. Matrot is not inflexible, though, when it comes to work in the cellar. It has a Stelvin closure - a screwcap, which I think is great for a wine that is not meant for the cellar. This is a wine worth buying many bottles of, if you have the space.

    This wine seems as if it could do another 15 years in the cellar without blinking. Brilliant purity on the palate, great acidity, very youthful, this wine will clearly reward long term cellaring, and somewhere down the line I think will make a great cheese partner.     Australian Riesling - Can it age? - Grosset, Steingarten and Leo Buring
    The fourth vintage of Polish Hill, it was bottled under cork (they switched to screwcap around 2000) and had mid-shoulder fill (if the bottle had shoulders, that is) and came directly from the cellar of Jeffrey Grosset (pictured right), one of only a few bottles remaining. The finish was spectacular and went on and on. Quite delicious.

    Chateau Cantemerle **
    So on the last trip to the cellar I brought back a couple bottles of Chateau Cantemerle -- one bottle of the 2000, one 2003 -- which we opened last night with hamburgers (90% lean, over toasted whole wheat bread, smothered with Gruyère, grilled onions, and dijon mustard) and Mary Ellen's Double Dutch German Chocolate Cake.

    Raspberries and tart strawberry emerged after decanting, but this hasn't fully developed yet, and may need another two years in the cellar. Deep blue-purple in color, with fresh blueberry and bay leaf on the nose, this Chateau Giscours ** showed tight acidity on the attack with mild, dry tannins on the finish.

    A Few Mature Wines
    I only began cellaring wine a few years ago, so if I drink a mature wine at home it means that I bought a wine that some one else cellared for me. Because in most micro climates the weather never really got hot enough for long enough, the wines do not typically have the stuffing that requires long term cellaring in order to tame.

    No two vintages of Monte Bello taste the same, and each vintage evolves in the cellar. have tasted Monte Bello cabernets from 1976, 1985, 1986, 1989, 1993, 1997, 1998, 1999, 2000, 2001, and 2004, and I am constantly amazed by the wine's ability to age gracefully. Monte Bello is my favorite winery/vineyard. These wines require patience.

    My Foray into Blind ID'ing Wine
    This took place in Deetrane's cellar, where there are at least 2,000 wines from all over the world, the bounty of three different wine drinkers, myself included. guessed the 2000 Smith Haut-Lafitte Blanc. Some people can taste a wine blind, knowing nothing about it at all, and are able to identify it. Do these people train for this?

    So Far, I Stink at the Wine Splurge
    have 225 bottles in my "cellar," which is comprised of my wine fridge and some space in Deetrane's basement cellar, and 30 of them cost at least $50. That's about 13% of my cellar that I would classify as a splurge. 2000 Paul Pernot Puligny-Montrachet 1er Cru Les Pucelles , $64. Why $50? Good buy. Oiy vey. Thank goodness.

    Non-Dosage Champagne
    The bottle must be topped off before corking and cellaring. The cork goes in and the bottle rests in the cellar for at least 15 months (3 years for vintage Champagne) and depending on the producer and the type of wine, for much longer. 2000 Chateau Tour Grise Saumur Brut Non Dose , $16 at Slope Cellars. No sugar?

The Sheas began bottling their own wine under the label Shea Wine Cellars in 1996 and shared the Adelsheim facility for wine making. Okay, so far so good.

    So this is an investment, not just in the Burgundy type of cash, but also in cellar space. Had I used this kind of thinking a few years ago I would have purchased and cellared some of the 2002 Le Bourg. BrooklynLady and I went to France together for the first time in October of 2005. The white is called Breze and is 100% Chenin Blanc.

    Champagne Notes from the Martin Scott Portfolio
    want this wine in my cellar! 2000 Schramsberg Vineyards Reserve (8) 70% Pinot Noir here. Seemed like it could continue to improve with cellaring. I had the distinct pleasure of going to the Martin Scott Portfolio Tasting last week at the New York State Theater at Lincoln Center. cannot enjoy myself that way. Also very good.

He has a 2000 1er Cru Puligny Montrachet - too fancy for solo drinking I figure. recently discovered a Napa Valley Chardonnay that I really like. know, sounds odd, right? Why, yes it is.

    Brooklyn Uncorked: A Tasting of Long Island Wines
    3" is a wine that I would not necessarily seek out to buy for my cellar, but I would gladly drink anytime. will admit that I loved the 2000 vintage of this wine, so I might be a bit biased. I'm already a believer in Long Island wine. already like them. They typically clock in between 12-13.5% alcohol. They are not "fruit bombs." Yummy.

    2000 Hafner Reserve Chardonay, Alexander Valley - Not in the same league as the '01 right now. Next visit I plan on helping the Father in-law translate his writing pad full of scratches and notes to Cellar Tracker I'm lucky because my father in-law likes wine and keeps some good bottles in the house. 500 bottles of wine in the bins!

    New Montevertine Releases
    2000 and '01 saw some excellent bottles but wines were irregular, '02 was a washout, and '03 was the heatwave year, with late ripening grapes (and I suspect Sangiovese is not late ripening, but I am not sure - anyone?) This was just outstanding, and I have a few bottles sleeping in the cellar. First: give credit where credit is due.

    A Tasting of Young Loire Reds
    He brought a wine from the 2000 vintage,a bit more mature than the others, and a top cuvee at that, unlike the "entry level" wines from the other producers in our tasting. Deetrane's impostor was the 2000 Domaine des Roches Neuves Saumur-Champigny La Marginale , $36 (but he paid $12 on the secondary market, as he is known to do).

    Another Saumur Champigny
    Turns out, he got a case of 2000 Domaine des Roches Neuves La Marginale , their top cuvee, for a little under $12 per bottle. Even though 2000 was a tough year in which many Loire reds were kind of fruitless and diluted, good producers should still make good wine, right? This wine sells for about $30 per bottle. decent wine?

    Wines of Catherine and Pierre Breton
    As is common in New York, a combination of artists and other intrepid souls in about 2000 began moving to Red Hook for the low rents. We have since then taken every opportunity to try other Breton wines - there are many cuvees, some meant to drink young, others aged in wood and meant to be cellared for at least a bit. love this wine!

    Some New York Wines
    The 2000 Estate Selection Merlot is an excellent Bordeaux-styled wine, with plummy and earthy aromas, a light texture, and lots of dark fruit on the palate. don't know if this is a good value because I don't have a riesling context yet, but I sure loved the wine, and I grabbed 2 bottles of it for the cellar. 2005 Hermann J. violets?
