    The younger vintages are all tightly wound and will reward with more than a decade of cellaring; the world’s best cabernet assumes a delicacy and refinement that make it very much worth the wait. The 1988 was really sublime with aromas of alluring mint and tobacco and a pinot-like delicacy. The wines were all from their cellars.

We also drank the 2005 Cellars Unio Roureda Llicorella Blanc , a white wine from Priorat made entirely of Pedro Ximenez, of Sherry fame. Thomas ' house recently. That would be the theme.     This bottle was purchased from WineBid.com at a huge discount three years ago. We took it out over the weekend to prove that Randy Dunn's Howell Mountain cabernets can age as nicely as any Bordeaux. The wax capsule on this bottle was lightly chipped, but the cork, perfect.

    1980 Caymus Vineyards Napa Valley Cabernet Sauvignon **
    Henry's End has an extensive wine list, with an emphasis on American wine, and they have a number of cellar selections from the 1980s, featuring Shafer, Caymus, Mondavi, etc. ordered a bottle of the 1988 Dominus, which unfortunately was funked. do not buy or cellar wines with screw-caps, and I encourage others to follow suit.

    Dressner Portfolio Tasting Notes
    In honor of their 20th anniversary, the Dressner folk dug into the cellar and set out a load of wines from their inaugural vintage. The 1988 Closel Savenni è res Clos du Papillon was complex and beautiful, and the Chidaine Montlouis Clos Habert and the Pinon Vouvray Moelleux were great too. The Italian wines - I didn't taste 'em.

    Deetrane Deep Down in the Cellars of López de Heredia
    We came upon several cellar workers who were bottling a 1995 Gran Reserva. At this point, bottles of 1988 and 1991 are comparatively blasé. When my pal Deetrane read the post from the other day about tasting the 1976 Lopez de Heredia Bosconia, he was flooded with good memories. Great prices in the shop though. for Crianza, €5.50

    The Beaujolais Challenge - Regnie
    Here is what we know: Regnie is the most recent addition to the group of Cru Beaujolais appellations, gaining its status in 1988. As it warmed a bit from cellar temperature the floral smells became more prominent and the juiciness of the raspberries was more pronounced. There isn't much out there that I could find.
