Matrot is not inflexible, though, when it comes to work in the cellar. It has a Stelvin closure - a screwcap, which I think is great for a wine that is not meant for the cellar. These are my impressions: 1983 Chateau Cheval Blanc - Transparent rusty brick color. No one was rushing to taste wines. Highly perfumed, lots of flowers. Well balanced, great acidity. MORE >> -

In the cellar, Gilles treats the grapes and then the fermenting juice, as delicately as possible.
